The positive millets are drought-hardy, gentle on the stomach and deeply native to Telangana. The trick to enjoying them is variety, so we rotate a different grain through each part of the week.
A simple rotation
- Start the morning with a thin ragi java or ambali.
- Cook korra or sama like rice for a light midday meal.
- Use arika in a weekend upma or pongali.
None of this is complicated. Cook a millet much as you would rice, give it a little soaking time, and pair it with a pappu or a vegetable curry. Within a week it stops feeling like a health trend and starts feeling like home cooking again.
These grains fed this region through every drought. They have earned a place back on the plate.
